INGREDIENTS

70 gms white snapper sashimi (or your fish of choice)
60 gms fresh avocado, halved, skinned and pitted

For the miso dressing (makes 30 ml):
10 gms of miso paste, with 30 ml of rice vinegar, 15 ml of olive oil and 1 tbsp of lemon juice.

For the mushroom pesto (makes 30 gms):
5 gms of mix diced shitake mushrooms, 10 gms of button mushrooms, 10 gms of enoki mushrooms, 40 gms of diced tomatoes, 20 gms of chopped onion, 10 gms of chopped parsley, Moroccan lemon pickle zest, salt, pepper, lemon juice and olive oil.

For the garnish:
5 gms fresh micro herbs
A handful of pomegranate seeds
2 gms miso powder

PREPARATION

• Marinate the fish in salt, pepper and lemon juice.

• Prepare the miso dressing by combining the ingredients above.

• Next, make the mushroom pesto by blending the ingredients listed.

• Miso Powder – dehydrated yellow or red miso paste blended to make a powder

• Place the sliced avocado on the plate, pour over the mushroom pesto. Then, neatly arrange the marinated fish and garnish with pomegranate seeds, micro herbs and miso powder.

Interview with DJ Charles Shillings

PA: We’re thrilled to have you back at Huvafen Fushi! What is it about this retreat, or the Per AQUUM appeal that motivates you to be a brand ambassador?

CS: I love Huvafen Fushi because coming here gives me a feeling of true peace… It’s a deep feeling that I have felt from no other place in the world. I feel very at home here especially because the people are so nice, it’s like dealing with perfection.

PA: How did you get your start in music, and what sources shaped your interest in the industry?

CS: My parents definitely influenced my love for music; I grew up listening to African drums, jazz and old vinyls as a kid. I remember watching the Jackson 5 cartoon and wanting to dance like Michael Jackson… there was also a DJ in the cartoon. I bought my first record when I was eight or nine years old, my first party as DJ was when I was 12, using 7 inches (vinyl records). It’s (music) been in me forever.

PA: What upcoming events and developments are you looking forward to?

CS: I’ll be playing for a Versace party in a few days and a few fashion shows over the next month.

PA: That’s all very exciting! With your busy schedule, you’ve travelled all over the world, where else are you looking forward to visiting?

CS: Yeah, I’ve been to almost every region in the world but I would love to explore South America more and visit Chile, Peru, Brazil, Bolivia…

PA: Apart from more travel, what’s the inside scoop on other things you enjoy in your free time?

CS: I love food and wine, and started taking cooking lessons from a chef from Brittany, Olivier Roellinger recently. I’m also looking into developing my own hotel with a studio, and make a food and wine connection there. I love taking things, putting them together and sharing with others.
